I have worked in the industry before. The percentage that this will happen to a known stiffer/asshat customer is the same as Larry Bird's ft percentage. To borrow the line from Rush "don't doubt me on this!!!"

The thing is, the customer will not know their food has been tampered with. If you are a regular customer at a restaurant, or if you order delivery often, these servers and drivers know you AND your tipping habits. Don't think you can frequent a business where tipping is expected and not be remembered positively OR negatively by the staff. It ain't gonna happen.

I do this. If it’s horrible service , I actually tip like 5% then on the back of the receipt I actually write out what they did wrong / could approve upon. Might not be my place, but it’s their job to serve. They need the criticism.

Bro. If the service is good, you too 15%, escpecially when you are about to make millions. Tipping $5 is hilarious. Especially when it’s not even 2%.
