Both ice machines make ice the same exact way. They have an evaporator with an auger and a sweep at the top. The temperature may be alittle cooler in one evaporator because of compressor size but they work exactly the same they shave the ice off of the evaporator as its frozen.

I agree with you, I'm just commenting that there is definitely a difference in the ice. Not saying one is better, just different. I prefer the ice from my Hoshi because it doesn't dissolve as fast as the Scotsman.

We had a Scotsman for 30 years, made the big cylindrical cubes. It was ok considering how long it lasted but did need frequent repairs. Replaced it finally with a kitchen aid that makes the square cubes. No problems for 7 years so. We do keep it cleaned every time it says so and clean the condensing cools when we clean the inside. Company had the cheaper whirlpool version at the office that died after 2 years, but it was poorly taken care of. Hoshizaki can’t be beat but pricy. Our Scotsman did last 3 years but with all the little issues it had, I vowed to never buy another one again. It probably lasted 30 years bc we practically replace everything but the compressor and cooling plate over that time span! It’s deathnail was when the pump went out for the bin (drains to a bar sink) and Scotsman wanted 400 for a replacement.

I have a friend that bought one of the ones that is like a big regular freezer ice maker and he loves it. He hated that the pure (clear) ice from the pump circulation models melted to fast in his drinks. Unlike ours his doesn’t make ice until you use enough bc it is like a freezer. The clear units almost constantly make ice bc the bin is really just an ice chest and it has to keep replenishing what melts.
