Turning a pole barn into a shop

So I've got a 20x40x16 pole barn made of utility poles that I plan on enclosing and turning into a shop. I'm looking for any tips/do's/dont's for a shop and a few questions. It already has power and a stub out for water if I ever want to put in a utility sink. I plan on putting in a floor drain when the slab is poured since I'll be keeping a boat in there.
One thing I'm unsure of at this point, is how big should the slab be in relation to the metal paneling. Is it standard that the walls should butt up to the slab, or should the slab be poured slightly inside the walls to prevent water from leaking under? Any recs for an erector on the northshore? Any ballpark figures on what it will run me to have it enclosed and slab poured? Planning on putting a roll up door on the end and walk through door on the side. Possibly a lean-to on one side too.

I would pour it with a small ledge around it so the water doesn’t run back in under the metal.

I've got a similar building planned but hoping for better pricing next year. My poles are 4 1/2" oil pipe. One slab bidder called what LSUJunky was talking about a metal edge or ledge. Same principle as a brick/rock ledge but with a different dimension.

it’s called a sheeting ledge
typically 1.5”x1.5” ledge at the edge of the slab
at the bottom of the ledge the wall sheet runs down past the top of concrete slab elevation to help prevent rain water intrusion

garage journal is a great web site for you to look at and ask questions. Plenty members on there have pole barns converted.
