We have the “bush style” smooth Hydrangeas. How far back should I prune them this winter?

Almost all the way to the ground (6") in the late winter very early spring.

Yes, b/c smooth hydrangeas bloom on new wood (current growing seasons growth) you prune them in late winter/early spring before they leaf out.
