Louisiana long green eggplant harvest time

Good morning guys. First time home and garden board poster and first year gardener here.

Wondering what yall consider to be the proper time for harvesting a long green eggplant. One of our plants is going nuts right now, and one of them is pushing about 6 inches and about 2 inches in diameter.

I read a couple article saying to harvest before they get 9 inches and that you do not want to harvest too soon because they tend to be bitter before they are ripe. Any advice?

I grow the Ichiban type that are dark purple but long and thin like the green ones you are growing. I pick them between 8-10 inches long and will either slice them to fry across the width or split in half to grill. You don't want them to get too large or the small seeds inside will really make a showing when you use them.

If I want to make an eggplant casserole, I'll use the globe variety because when making casseroles, I'll peel the eggplant first and with the globe, there's less waste.
