Normally watering early AM keeps the plants healthy. However, my jalapeño plants and really any outdoor plant is starting to wilt and die. I've kept a lot in oversized pots, so I've moved them to mostly partial sunlight.

Any advice to keep everything from dying off?

Give them a shower in the evening and full water in the morning. That should keep things green.

Water them good and wait till they dry out to rewater. Do not overwater.

The potting mix has much to do with it too. I have some that dry out quicker than others.

Are the pots mulched?

I have mine in 7 gallon grow bags with mulch on the top. Partial sunlight and they can go anout 3 days between watering before they wilt

It gets hotter than hades here. Last year I recorded over 70 days without rain. I had 127 degrees real feel in early August.
I just had to let my peppers die. Just too damn hot for them.
My advice, don’t get too attached. Water. Water. Water. Hit some local nurseries that have native plants.
Welcome to Louisiana.

I've found that many full-sun plants can't take the south Louisiana sun all day and wilt every afternoon. Hibiscus is a good example. Try to find afternoon shade and/or add a brief morning watering.

During last summer's dry days, I lost two full-sun sasanqua that were 10+ years old.

Plant some gingers and bananas. Embrace the tropics.
