The more I think about it, I’m not really sure why a high end stove wouldn’t have both options? Why not have half the burners for each? Or 2 burners gas up front, one induction and everything in back is induction?

This might also be a reason many restaurants don’t shift to induction. Then again, maybe there’s a more durable commercial grade product better suited for restaurants with line cooks that don’t give a shite about somebody else’s property.

When my house loses electricity, it’s usually brief. The only time long term electricity loss was an issue was during Harvey.
I just used my outdoor propane burners.
Now that I’ve switched to induction, I don’t see me going back to gas in any future home. Never thought I’d be that guy.
I did maintain a 2nd home for a few years that had gas, but it simply was never as good as induction. If it wasn’t a rental, I definitely would have converted to induction.

Agreed. Fortunately we have induction in downtown condos that rarely have power outages. During Laura we had a house in Alexandria with gas and I was thanking God for that. Otherwise, induction all the way.
