I'll use seeds dated 2019 but not older than that since the germination rate usually goes way down.
I used to use seeds frozen in the 1980's, varieties no longer commercially available.

Then I took work in FtWorth and was on-call 24/7 for almost a calendar year, when the power went out and surge ruined the freezer control panel I lost all my old seeds. (my parents had visited and loaded the thing up with processed heat n eat crap, that's worse than game and fish when it rots, trust me!)When I finally got back about 3 months after the power failure I could smell the freezer while reaching to put the key in the front door lock. Everything had to go.

The only seeds that ever gave me trouble where ones stored on the door that would have frozen/thawed several times over the decades. Otherwise, germination rates were up to expectations.

Can I clip some of the greens and leave the turnips in the ground?

That’s what I do. Obviously leave enough leaves for the plant to continue to grow.

I sow them directly on the top of the row and never even cover them. Up in 3 to 4 days every single damn time. Turnips out the arse. Same for mustard greens
