Curing sweet potatoes

What methods do yall use to cure your sweet potatoes after harvest. I put mine in a greenhouse this year but found it near impossible to regulate temperature between 75-90.

I just stick them in milk crates in the shed and cover them for a couple weeks.

Attached laundry/utility room with no hvac, gets hot, gets cold, etc. The year we did them they came out perfectly. Didnt monitor temp at all.
