To my pleasant surprise I only gained a pound.

And it's probably mostly water weight. By the end of the week, you'll be back to baseline.

I am sore as sin after these last two days. I have had a set of heaviest weights on all lifts though. But when I start I feel like I can't even lift the lightest.

Started March 1 on a dare basically that's ended up into a lifestyle change complete with 31 lb loss to date. I'm going to the beach for the next week and thinking of doing nothing. May walk in morning.

I've gone 5x week at least since Mar 1 so rest will be beneficial correct? Or is there any downside to taking it off?

Every couple of months I take a full week and do nothing. I don't eat trash or anything, but I don't work out at all. I always come back better. My lifts are better. My endurance is better. A rest period can be great for your body.
