Processed meat is terrible for you.
Depends on what you mean, but this is largely not even true. And it's certainly more healthful than virtually any carb you would eat in its absence.

e.g. Salami is totally fine. I would eat it 100 times out of 100 instead of oatmeal.

Ok but for years my total cholesterol sat ~200-210, and since eating more fiber (last couple of years) it sits ~175-180.

I'm not arguing the merits of hdl, ldl, sdldl, etc etc because I don't know enough about the intricacies of cholesterol to argue about it, nor do I really care enough to argue. My doctor wanted to see my cholesterol lower, and I did it by eating more fiber.
Right, but did that have any merit? You moved around a useless metric.

I said it before, but A bunch of people in this thread are pointing out a million things, ole boy is 50+ lbs overweight. Losing that alone will make the biggest difference in health. Dont realyl care what diet he uses to do it, that will make the biggest difference.
I totally agree. I just happen to think cutting out bread and sugar (to be blunt, nothing keto fancy or any ratios or any weird shite) is the easiest way for someone to do that.

Yeah, I see that a lot. Same with the exercise. It's likely that any non-sedentary activity would have an impact, not just some finely honed regimen.
