With or without the Knight Enchanter ability?

How do I get the person to buy influence? I'm about to jump on now and do some side shite. That would be a good one to get.

One of the vendors in skyhold sells merchant contracts. She is right by the horse stables, adjacent to another female merchant with some expensive weapons. She has a couple of items of armor and such, but RB over to misc items and they will be there. Range from $800-$6400.

Without
I had some trouble with Highland Ravager until I realized I couldn't just ignore the dragonlings that spawned and needed to kill em.

I've got Skyhold but she didn't have any influence for sale. Just some expensive weapons and runes were all I found.

I used to not be a completionist and now I am. I don't like that.

I've got 11/12 mosaic peices for one and that's bothering the shite out of me

Really needs to be a High Level Scouting Perk which adds Mosaics, Wine Bottles and other items to the map.
I have 28 of 29 wine bottles.

I could never get the first scouting perk to open up, I did everything research told me to do to open it. I am about to start my 2nd play through and I am rolling an archer rogue and rolling with two mages, one sword and board tank. Melee is at a disadvantage sometimes in this game. There are parts of the dragon battle in the Hinterlands where ranged can attack but melee cant.

Just picked this up, any tips for beginners?

Don't hoard useless shite in your bags
Become familiar with the war table
Learn how to craft and what's good
Explore everything
Don't frick with lvl 12 fade rifts at level 4
Don't try to jump around terrain too much..there's always a better and easier path.
Hard mode is a decent challenge

Use it all the time. The game clock keeps running when you aren't playing. Use your resources at the table before you turn the game off so you can hit it again when you turn it back on.

Is there a better race to pick?

Depends on what class you want to play
Also, Qunari can't wear a good bit of the armor in the game (only for human, elf and dwarf).

Learn the "Character Record" part of the menu before getting too far in. And not just the skill trees and leveling up.
Use the tactics part to set your skills to Preferred/enabled/disabled. For example, barrier should always be a preferred skill for a mage, but I find dispel pretty much useless except at fade rifts. It is disabled for me, and I only switch to the character and use it as needed.
Use the Behaviors (I think?) to set their tendencies. Keep mana threshhold around 50%. For melee characters, have them follow/self to attack opponents alone, or follow/(other melee character) to have them double team opponents. Ranged characters should defend/self to keep them away from the melee scrum.
This is all in an effort to make your AI act somewhat competently without you constantly stopping the action with tactical mode. Otherwise, your mages and archers will just run into the melee and you'll be wasting alot of healing potions.
ETA: And if you're a mage, invest in fade step, even if it's the only ice spell you put points in.

The elemental symbols above the battle map during a battle: Is that what the enemy is strong or weak against?
