Gundyr? He sucks the first time playing. I picked Thief as my first class and I probably died 15-20 times.
I would recommend starting as a Knight or Pyro because the knight's shield is pretty beneficial for that first fight (just get behind and get 1/2 swings then shield up) and he's pretty weak against a pyro's fireballs especially in his "phase 2" form.
In either case just don't get greedy on hits and leave enough stamina for a roll dodge.

Kind of. Eventually you can buy them for 13k souls a piece once you get certain ashes to give to the handmaid (old lady).

No. That's where another player playing online died and hasn't collected their souls yet.

It may block damage okay, but it probably will drain stamina more than the knight's. It's generally better to roll dodge than use shields.

I wish this game had a boss wave mode where you would fight random bosses that would progressively get more difficult.

are you using a guide? there is a boss in the base game that is really hard and also tough to find without a guide (imo)

Basically watching a playthrough Cowboy did a while back, mainly using it for not missing certain key items because he shows you where everything is. I'll usually do the bosses without watching him fight them, and if I'm having too much trouble, I'll see what he's doing. He's playing a straight up strength build with the FUGS, so he's just beating the shite out of stuff.
So I'll explore as much as I can on my own and watch his playthrough to make sure I didn't miss an estus shard or something.
ETA Is it an optional boss? Looks like I have 6 left, 4 of them being optional.

Doing really well with the first part now. I’m able to get him to his second Phase form. Can get there with all 3 health potions.

I’m playing as an assassin, now I need to learn this phase of him, I really just want to move on. Lol

It says spook on the wheel. I’m assuming it’s some sort of sneak for the assassin.
