Definitely Viticulture: Essential Edition (same publisher/designer as Scythe and same publisher as Wingspan since you are enjoying both of those. Viticulture is a perfect game and everything in it just makes sense.
Castles of Burgundy sings at 2 players, one of my favorites.
Some others to consider are Isle of Skye, Port Royal (Pegasus-Spiele version), The Crew and Santorini. I could go on but these are just a few from my collection that I really like at those player counts.
