This one or a Victorinox boning knife. I picked up the Victorinox due to the recs on here and love it for the price. Probably going to go Victorinox from here on out for knife purchases.

I have a custom from Mert Tansu and a Toyama that I use a lot. If I really want to beat the shite out of something I use my Henkel

I prefer using the various sized slicers( I thinks that's the label on them) than either my chef's knife or Santoku. Even the smallest(paring?) one gets used more often.

Made In 6" Chef's knife ...use it everyday ...the 8" stays in the block crying to be pulled out...

Bourdain recommended this in his Kitchen Confidential book. I've been very pleased with it.
