What is your creole/Cajun seasoning recipe/blend?

I have a ton of dehydrated ghost and Carolina reapers I’m looking to grind and make use of. Figured a superhot creole seasoning would be a good start. Tia

You don’t necessarily need to add them to a seasoning blend. You could keep them separate and add them as you go like with salt and pepper. Your basic Creole seasoning will be a blend of paprika, onion powder, garlic powder, white pepper, cayenne, oregano, and thyme. I’ve seen variations on the ratios but I think I just used equal parts of each when I made mine. I’ll add salt separately, usually more cayenne, and black pepper, and fresh garlic, onions, and so on. But it makes for a good base of essential ingredients that can go into about anything.

But if you’ve got tons then you could experiment with different mixes to see what you like. Keep a log and label the containers. I’ve saved so many spice jars (old spice jars?) that I’ve actually begun to throw some away. And I still have more than I’m using. Failing that you can buy them at a spice shop like Penzey’s. But I’ve probably got a half dozen or so jars of ground dried peppers and spice blends in the cupboard labeled with masking tape.
