If you have a ton another way to preserve them is just half them fill them in a jar with a couple cloves of garlic and cover with vinegar that you have boiled and dissolved salt in. You can use it as a pepper vinegar or let it age then add fresh peppers blend and then simmer for 30 minutes or so. I have done this with a ton of cayenne and it makes a really good vinegary La style hot sauce. I have been using bottles of Texas Pete I get from dollar tree and empty and wash off the label. THey have a large mouth with a flip top cap so it is easy to stuff halved peppers in.

We went thru the jar already but this time we have the peppers sitting for a few days. Stuff is so good and goes on anything.

I spooned most of the oil out before going in the fridge the first time. Reason I used veg oil was because I had used most of my habaneros already, I thought olive oil might temper heat down too much in a heavy Serrano mix. I got a ton of habs now to add so I’m slicing em up and doing your method

If the ph is right which it should be with the acidity is should store for six months or more in the fridge.
