I don't follow a recipe and it varies from time to time, but this is what I did last night and it was really good.
Shrimp Fried (Cauliflower) Rice
1 lb. shrimp (peeled & deveined)
1 12 oz package frozen cauliflower rice
1 8 oz pkg sliced mushrooms
1/4 to 1/2 red bell pepper, diced
Handful of chopped pecans
Tony's
Hot sesame oil (or regular)
*Optional - green onions
Sauté mushrooms and peppers in olive oil. Add chopped pecans. When veg are almost done, add seasoned raw shrimp and a little butter and sauté till shrimp are done. (I moved the veg to one side of the skillet and sauteed the shrimp on the other side.
In a separate non-stick skillet, cook frozen riced cauliflower on medium heat till tender and dry. Season with Tony's and add to shrimp skillet.
Add a couple of splashes of sesame oil and combine all ingredients (can do this over a medium-low heat). Taste for seasoning. Add a bit of chopped green onion for color, if desired.
You can rough chop the mushrooms and cut shrimp in half for bite sized pieces if you like.
