I'm in the middle of a move and didn't realize I already brought all my dishes and pots and pans over to my new house already.

Looks like I'm eating a cold can of green beans that I will have to stone open

Filet mignon roast, injected with Cajun butter, with a nice salad. The husband is also enjoying some cookies for dessert.

Homemade Mahi Baja Fish Tacos

Grilled Mahi
Baja sauce- crema, plum vinegar, chili & cumin, cayenne, and diced japs
Garnish was purple cabbage, juliened yellow peppers and diced mango
whole wheat tortillas

not bad

polynesian chicken in the crock pot (one of my most favorite crock pot dishes) sweet peas and skrawberry ice cream.

Polynesian Chicken(from my cooking light crockpot cookbook)

Ingredients:
3 boneless skinless chicken breasts
6 boneless skinless chicken thighs
1/4 tsp. salt
1/4 tsp. black pepper
cooking spray
1(8.25 ounce) can of pineapple slices in heavy syrup, (or the bigger can..really doesnt matter)undrained(note:make sure the can says heavy syrup..if you cant find it you can buy the regular kind and add honey)
1(8ounce) can of sliced water chestnut, drained
1 cup fat-free, less sodium chicken broth
1/4 tsp. ground ginger
1 garlic clove, minced
1/4 cup low-sodium soy sauce
1/4 cup cornstarch
1 TBS white vinegar
1/2 cup diagonally sliced green onions
6 cups hot cooked rice
6 TBS chow mein noodles

1. Sprinkle chicken evenly with salt and pepper. Heat a large nonstick skillet over medium high heat; coat pan with cooking spray. Add half the chicken pieces; cook 3 minutes on each side until browned. Repeat with rest of chicken. Place chicken in a 5-quart electric slow cooker.

2. Drain pineapple, reserving syrup in small bowl(this is when I add the honey if I was unable to find the heavy syruped kind). Quarter pineapple slices; arrange pineapple adn water chestnuts over chicken in crockpot. Combine reserved pineapple syrup, chicken broth, ginger and garlic. pour over chicken.

3. Cover and cook on LOW for 8 to 9 hours (mine only takes 7) or until chicken is tender. Remove chicken from cooker with a slotted spoon and keep warm. Leave liquid in the cooker and turn it up to HIGH.

4. Combine soy sauce, cornstarch and vinegar in a small bowl, stirring with a whisk until well-blended. Stir cornstarch mixture and onions into the crockpot. Cook, uncovered for 10 minutes or until slightly thick(mine takes about 5), stirring frequently. serve chicken and sauce over rice, top each plate with chow mein noodles.


i never use the chow mein noodles, just brown rice, and usually iadd a half a cup or so of cashews in with the chicken/water chestnuts/pineapple in the beginning.

its an awesome dish if you're sick of the usual chicken and mushroom soup kind of thing.
