Umai Dry Bags

I just received the Umai Artisan dry aging starter kit. Has anyone used this with any success? Any go to advice any of you may have?

I used the ones for a whole ribeye. First one turned out great. Let it age for 45 days. 2nd one wasn’t so good. It aged for 45 days also. Think I didn’t get it sealed up properly, not the bags fault.

We had the owner come to the last Kegtoberfest I organized and they did a grilling demo of a whole Umai dry aged Strip Loin roast vs store bought vac pak. The difference was night and day. They have a great product! In fact I was just looking at a kit they gave me yesterday.
