You can't low and slow a turkey like pork or beef. Cooking at 250 was your issue. Not drying out from brining can be a problem but the first time I ever brined a bird, I did the same thing and it came out fine.

How did it taste?

The flavor was very good. The meat was just coming off the bone so I can understand the don't low and slow part now. I'll definitely cook it at a higher temperature next time. Appreciate the input.

For my next one...
-Higher temp
-Cook for a shorter period of time
-Pat the turkey down

Sounds like you and I need to find a happy medium. I cooked mine hot and fast, and it was not tender at all. Moist, but not tender.
