Just curious what the consensus is here. I happen to love corn, but is it a blasphemous faux pas to add corn to etouffee, sort of like tomatoes in gumbo?

I've made corn maque choux to go as a side dish with my crawfish etoufee. I ended just mixing them together on the plate. Damn tasty.

That's what I was thinking since I love crawfish in my corn maque choux. I'm gonna enjoy it though because it's probably my last batch of the season.

I'd cook corn maque choux on the side.

I have turned left over Maque Choux into a corn and crawfish Bisque before and it was great

nothing wrong with corn as a side dish no matter what you're eating.

no thanks. I like corn, but I'm an etouffee purist.
