Thanksgiving Menu Thread

Would love a sticky if possible to keep track of everything.
First recipe is fairly simple.
Smothered Corn and Sausage
2lbs of good sausage (I'm loving bourque's pork sausage these days)
5 cans of corn, drained
1 can of diced tomato
1 small onion, diced
Two stalks of celery, diced
Tsp minced garlic
Slice your sausage into pieces as thin as possible to not fall apart. Brown over medium heat.
Remove sausage from grease. Sauteé the onion and celery until tender. When onion starts to brown, add your tomatoes and reduce until limited liquid. Add drained corn, reduce heat to medium low. Add garlic and sausage.
Stir and cover until corn is tender.
Add salt and pepper to taste. With good sausage, you won't need anything.
Second recipe:
Brocoli and Cheese Casserole
Frozen broc, 1lb.
3 cups cooked parboiled rice
(Needs to be parboiled so it isn't as sticky)
1lb of mozzarella. Life is easier if you grate it finely yourself.
1lb sharp cheddar.
Parmesan cheese.
Cut the frozen broccoli into smaller pieces. Toss lightly with parmesan cheese. Roast in oven for ten minutes.
Remove from oven. Add cooked rice to broccoli and stir. When mixed, add two tblspns of parmesan cheese and a half two of black pepper and stir again.
Begin adding grated mozzarella and stirring in between additions. When it is sticky enough to be difficult to stir.
Flatten out into baking dish. Top with another tblspn of parmesan and the lb of sharp cheddar. Bake at 425 until cheese on top is bubbly.
