Putting tasso in jambalaya or beans, do you guys/gals brown it lightly and what size do you cut it?

diced, brown to bring out the flavors. The browning remnants stuck to the bottom of the skillet create the brown gravy

I cut mine in too small pieces and got them over done last time. It was more narrow strips and they cooked way to fast. I'll cut them bigger next time.
