I am making baba ganoush tonigh. How long does Tahini last if kept in the fridge? I believe that the jar I have is over 4 yrs old. It doesn't smell rancid.

Probably rancid wouldn't trust it. You'll ruin a bunch of good eggplant and could possibly make you sick.

I'm leaning towards chunking it to. I just picked the eggplants this morning and do not want to ruin the dish.

I really didn't want to go to the store.

A can of tahini lasts a long, long time, even if you make hummus frequently, as we do. I have noticed it doesn't go bad or rancid, but develops a bitter aftertaste when it gets too old. I'd like to take that can to a paint store and see if they can homogenize it on that paint can shaker.
