Susan Spicer Cream of Garlic Soup

I am making Bayona style Cream of Garlic soup and Sweet Potato Brioche for Thanksgiving appetizer and cannot find any information on the crispy garlic topping she puts in the soup. Does anyone know what the topping is? Butter fried garlic strips seem like they could be bitter, but it doesn't look like croutons in the pictures and the recipes don't mention a topping. Thanks.

pretty sure it's friend garlic strips. but i don't know where you get butter from. slice the garlic thin and fry in a pan w/ about a cup of oil. just don't burn them. let them sit on a paper towel for a good while to cool down and get rid of the grease.

If you want to get rid of the bitterness. Place the sliced garlic in a pot of water, bring to a boil, drain and repeat two more times. You could also use milk. Then fry as per normal.
