I made a stock yesterday for today's gumbo, which unfortunately was forgotten about and left on the stove. It had been strained and was left to cool in a storage container. I'm thinking this will be fine after boiling for a few minutes. Any thoughts?

I would not use it. Salmonella loves chicken or shrimp stock.

Harold McGee says it's fine if you boil for 10 minutes. It's already added to my gumbo now, so hopefully we don't get violently ill later.
