Dear Lord.
Are there actually humans who can eat that shite? I can't imagine the heat in those things. Guaranteed to give the screaming shits.
As far as the steaming goes, it is a bit overkill for a home boil. However, you'd be surprised how many times you have eaten steamed crawfish if you buy from the larger retailers. I'm talking to the 500-several thousand sack a week sellers. And believe it or not, there is some validity to the cleaning that occurs when steaming.
However, that has little to do with why they do it, except for that they can get more "soaks" in on their soaking pot. It is a much cheaper, quicker way for them to make boiled crawfish. While they don't use a pot like this to steam them, they do have steaming rigs which use heat and pressure to produce steam quickly and soak in a lukewarm pot of seasoned water. The amount of seasoning used is no different than if they were boiling them, and certainly not what this yahoo used.

Yep, that's only north Louisiana, not anywhere else. And how do you steam something IN water?

To the OP,
I have a rocket pot, it's great.
I can't really comment on the total time to boil reduction, because I also have a double jet burner. The combo of those two things is great.
