Spatchcocked a Turkey

Yesterday I spatched a turkey on the Keg that was probably about a 12 pounder. Seasoned it with Leblanc's Gunz and Roses and their Creole Seasoning.
It was coming out great with a crisp skin and I decided to flip it to get a lil more color on it. That was a mistake as it helped to screw up a beautiful looking bird. Lol....... It still came out deliciously tender and moist.



When the turkey was almost done I made a stuffing(box stuff)that I added fresh green onion sausage to and some candied yams and we also had some green peas with that as well.

The candied yams almost done.



Made myself a plate and ate well.

Love a turkey spatchcocked...best/easiest way to cook it so all various parts come out juicy & tender.

did it for Thanksgiving. Seems to be all the rage. Came out great.

Been wanting to do that, thanks for the post. I agree with this meal not being just for Thanksgiving!

Do this with chicken and turkey all the time. Did a turkey the last 2 Christmases that everybody loves. Cut the backbone out of the bird, press down on breastbone til it cracks, and the bird is basically one thickness. Make a compound butter(garlic, herbs, lemon zest, salt) and put it under the skin of the bird. I do mine on the grill on 350 indirect heat on a sheet pan elevated about 2" off of grill surface. Cooks in no time, nice and juicy. A tip is after you prep the turkey, put in the fridge overnight uncovered. Makes the skin crisper.
