Following other low carbers on Instagram has given me many good ideas and recipes to try. Maybe start following some people who cook easy meals?

Gotcha.

You said you can make gumbo and etouffe. With that im assuming you can make a roux and you're familiar with the trinity and adding certain ingredients at certain times.

Just Google some basic recipes with proteins that yall like. If you can cook the 2 things above, you can make plenty of the recipes on food network and all recipes.

From the description of your husband, who cares if you mess up a meal? He sounds like he will eat it. You'll realize your mistakes and improve for the next time.

Invest in a crock pot. The most you will have to do is cut some veggies and brown some meat. They make very good meals while you're at work. Just prep the night before and put it on in the morning. Very quick and easy cleanup also.
