Smoking turkey for first time - cooking too fast

We aren't eating until around 2, and had hoped to cook low and slow. Put on this morning at 6 on WSM, and it is alreay at around 150 in the breast. It has been cooking hot, and I've got all vents closed on bottom except for one that is partially open and the top vent is barely open.
If it finishes before time, which looks like it is, how do I store it so it is good to go?

tried to warn people. i did a 18lb bird last weekend in right at 3.5 hours keeping temp at 320ish

It finally slowed down right at 164 after almost six hours. About to pull off and we will east around two

Mine finished in 3 hours flat. About a 13.75 lb one maintaining the smoker at about 290. It was about an hour ahead of schedule.
