Gotcha, I may try the sampler. You ever use black on steaks?

Even though it is a bit dry I bet if you chop up that roast for tacos topped with salsa verde and lime would be fire.

I agree with ruzil. I ‘ve done it with sous vide and finish in grill. Found the idea on serious eats. LINK

I wonder if you can pre-cook it in an instant pot instead of sous vide. Not really trying cook anything for 36 hours.

Maybe salt and pepper, add water and a little liquid smoke. Instant pot for a bit then throw it on the smoker.

Red is also really good on any cut of chicken. My favorite is HC Redon smoked wings, finish with a dusting of the HC Amplify.

I'm bumping this thread since I'm trying a Chuck on my Kamado today. Since 205° looked a little dry, should I pull at 190° or 195°?

My notes show I've pulled it at 200-210 several times. Put it in an ice chest (wrapped) for a couple of hours, and it was good.

It was really good. Had the same stall at 150 and came out very similar to a brisket. It doesn't quite slice as well as a brisket because of the grain, but flavor wise it was similar. Also very little leftovers. We got the Prime cut at Costco.
