That's where my Dads side of the family is from. Gumbo from that area is much thinner than anywhere else. I like it without a roux.

So am I, born and raised. We didn't cook any gumbo with roux. They were all file' gumbos. Our shrimp stews were basically roux gumbos with boiled egg and quartered potatoes added.
Once I got older I branched out into "lafourche" style gumbo.
