I worked in the boiling room of a popular seafood restaurant when I was in high school. I remember the owner telling me there were regulations in place that required crabs to be boiled for 11 minutes.

So how did they pick? I’ve never boiled crabs anywhere approaching that.

I still boil my crabs for 10 minutes and they peel and pick just fine. My young kids peel their own with no help from me, so that should tell you.
