Ive done that a couple of times on the Primo. It's tasty. I've done it with banana leaves and with foil. Couldn't tell a difference and the foil was a lot easier.

I think the leaves add to the flavor, but mostly I'm going for the al pastor flavor from the achioti. I agree the leaves are kind of a pain to get it wrapped up tight.
