The Southern Foodways Alliance has a good podcast, Gravy, that covers southern food topics.

They will have five episodes this year as part of a virtual Cajun Country Summer Field Trip.

First up is "Ten Gallons and a Bag of Cracklins: Filling Up in Cajun Country," about the gas stations, former stations, and places built like stations that serve up boudin, cracklins, crawfish, pistollettes, etc. It's a good, short listen.

A good episode on a different topic is Where Mexico Meets Arkansas: "Menudo, sopes, gorditas, tortas, gringas, huaraches, mangonadas, and alambres are just some of the specialty dishes of De Queen, Arkansas, population 6,600. A majority of the town’s residents are Latino. Many of them migrated from Mexico to southwest Arkansas for jobs in poultry processing plants."

I remember stopping there for lunch many years ago and wondering why in the hell all those Mexicans were there in the middle of redneck country.
