Anyone cooked them? I started another thread in Home/Garden about growing them, but figured I'd ask in here about cooking them.
I've got a good recipe from Anson Mills that I'll probably tweak a bit (replace the classic french trinity with cajun as I prefer the cajun trinity), but I'd love to hear any other suggestions from those who've made them.

Not sure what the Anson Mills recipe suggests, but I like peas with a little salted or pickled pork. Dice it small. Andouille, diced, is also very good.
