Don't throw away dem Ham bones and scraps. Save in quart freezer bags for future use. Great for cooking Beans, Veggies and making Ham Stock later.

Same goes for leftover Turkey/Chicken carcasses/scraps, except you will need gallon size bags. Gumbo/Soup base or Poultry Stock.

I never save turkey carcasses I just boil them and save the stock. Seems easier that way.

Ham stock is one of the best tasting stocks. I collect bones and shanks to make it. I make a black eyed pea and andouille soup for New Year's every year and the ham stock really makes it. For that stock, I use thyme and rosemary along with red wine over the bones. Could throw some rice in a bowl of stock and eat it just like that.

Yes, if you have time to do so and have limited freezer space. They do save for a few months well if need be.......

I save Chicken trimmimgs, fat, etc. thru the year also for future use. BTW, I have a large freezer.......

I start early and let it slow seep for hours. The smell thru the house is wonderful.

I am just starting the turkey stock for tonights gumbo. I had to employ two stock pots to fit the carcass in the water.
