So I pulled up some grocery store, garlic, and shallots I planted during the winter as they were bolting a few weeks ago. They’ve been drying outside for about three weeks so now it’s time to use them. I’ve never grown garlic or shallots before.



Taste test very good. Garlic is very garlicky and shallots are on point.



I pulled a recipe for sambal off the Internet and made some adjustments in addition to the Thai chili I already had. Added ginger since I had it in the refrigerator, I added garlic as recipe only called for shallots and now I have a shite load of garlic. I always love getting to use my mortar and pestle.



So I didn’t have brown sugar so I had to substitute jaggery, which I think is even better.



Lime zest, lime juice



And some fish sauce and oil. Gride to a paste.

I added some cilantro, because it just seemed like the right thing to do since I already had it.
