Buy the beets yourself, peel and dice, olive oil and seasonings then into the oven for about 45 or so, make the other components of the salad. Top with a raspberry vinaigrette(with chopped basil). YOur mouth will be happy.

Coffee Bean on Coursey has some very good salads.
