I made this tonight. It was VERY good although it came out a really weird color green as I didn't add much cream or cheese. Would definitely make again. The only changes I made were to roast the onions with the broccoli rather than sautéing it and I used a little cream rather than milk. Oh, and I used white cheddar rather than gruyere b/c that's what I had in the fridge. Thanks for the recipe!

yeah, it's not exactly a pretty soup, as I said. I'm glad you liked it and it's good that you did it your way. I did mine my way and that's what makes these roasted veggie soups so great. Take the basics and then add the flavors you like.
