Kinda new at this. Did some damn good chicken wings a couple weeks ago. Want to do ribs this weekend. What type? I personally like baby backs. I have a dry rub recipe from a friend he swears by. How long? What temp? What wood? TIA

Then baby backs.

Give his dry rub a try. Personally I smoke at 250F. About 3 hours unwrapped with a dry rub, then wrap them in foil with some butter and some brown sugar for about an hour. Then unwrap and finish them until the meat is pulled back and they are probe tender - about an hour longer. I like a mix of hickory and cherry for ribs, but wood can be a personal preference. Cherry brings out a great color on pork.

Done it a million times now. I tried the 3-2-1 method at 220, the ribs were good, but not great. Came out too fall off the bone for my liking.

I started doing 3-2 and I jack up the heat for the last ~20 mins to get them a little charred (personal preference).I then wrap in butter, honey, and brown sugar. Let them sit for 10 minutes. Then demolish.

Meathead's rub is the GOAT.
