Restaurant recommendation in Paris

I will be in Paris for an evening before departing for Normandy. We'd like to get one excellent meal before we leave. Just classic French food and wine. My initial thought was to look at the Michelin list and make a pick from there, but figured I should check here first.

Location isn't a big issue, we are staying near the Arc de Triomphe and can take the subway pretty much anywhere.
