To me ham stock, thyme, and bay leaf are a must. I also like to add a little splash of crab boil. Variety of meats as well. I like hamhock, a good smoked sausage(my first choice would be rabideauxs extra smoke) and good Tasso. A little crumbled bacon is good as well. I honestly have not made a pot from dry beans in years. I can doctor up blue runners with quality ingredients that I would put up against anybody's.

I made the Camellia great northern beans with some tasso and some Double D's sausage tonight. Almost NO flavor though.

I am thinking of removing some water and adding some chicken stock. I dumped in 2 table spoons of cajun seasoning and it is still bland.

Onion, 3 toes of garlic, tasso,

WTH? I am at a loss as to why it is so bland.

Add herbs, a bay leaf or two, and green onions. Finish with a bit of parsley.

Bablefish5 on YouTube has a recipe that I use for hiking but it's good for the house too and easy to make
