Recipes for so-so "fresh" tuna

Trying to think outside the box for that tuna we all see at the grocery store that's a good price but not exactly fresh? I saw 2 medium tuna steaks the other day for $8. The flesh was separating badly, looked "dry, but not yet brown. But I've been told it browns fairly quickly and that's not necessarily a sign of it being bad.

I'm talking things like smoked tuna dip for things like a tuna melt or tuna salad, etc. Recipes for cooking it through and adding ingredients to it, the opposite of a seared steak.

Any outside of the box recommendations?

Try this tuna skewer recipie:

Big cubes of the tuna
Vidalia onion chunks

Mix the following in a bowl, then brush on before grilling on super hot grill:

Ponzu Sauce
Sweet Chili Sauce
Chicago Steak Seasoning
Chopped Green Onion

Its got a great tangy asian flavor mixed with a salty deep flavor from the Chicago seasoning. First time I had it I was blown away by the flavor explosion.

Great way to mask less than fresh tuna.

Never thought about doing ka bobs with tuna, really like the idea. It stays on the skewer pretty well? Thanks for the tip.
