recipe suggestions for smoking beef ribs

I am thinking about smoking some beef ribs on Sunday. I have never done this but would appreciate any recipes and cook temps\times\internal temp etc
or should i do St Louis ribs?
I have done baby backs several times so wanted to try a different rib style

Beef short ribs are easy and very awesome. Rub with salt and pepper and smoke at 225-250 until they hit 195 or so. It'll take around 8-10 hours depending on the size of the rib.
Beef spare ribs aren't really worth the trouble. Too much fat and gristle and not enough meat for me.

Just did some on Monday, I rubbed them with franks red hot, then kosher salt, coarse pepper, garlic powder and ancho chile powder. I smoked them over Pecan at 285F and they were done after about 6-7hrs. I then wrapped in foil and put them in my Cambro for about an hour. As far as doneness, I just probe them with a tooth pick until they feel like butter. I dont use my thermapen on beef ribs.

I've done them many ways. The best was to smoke them for about an hour or two and then wrap them in foil until they hit about 180/185. Unfoil them, crank up the heat and put a nice char on them the last 10 minutes.

Totally agree. I recently tried spare beef ribs and did not care for them for same reason. Have had smoked short ribs before and they were amazing.
