I picked up a couple nice ribeyes for tonight and realized I have some crawfish tails in the freezer I pealed earlier this year. Im looking through the Cajun & Creole Cuisine encyclopedia but cant find any recipes for a crawfish sauce/topping that I could use.

Any of yall have a good one?

Heavy cream, garlic, crawfish tails. Little bit of extra seasoning if your tails weren't hot enough.

Chop the garlic, cook it for about a minute. Throw the tails in and cook for another minute. Add the heavy cream and reduce to your desired thickness.

Maybe a crawfish beurre blanc?

In a pan pour white wine, garlic, salt, white pepper. Boil up.

Add heavy cream. Boil up.

Slowly whisk in non salted butter till in thickens.

Add crawfish tails.

Boom.

I personally prefer a quick saute in butter for shrimp to top a rib-eye. Season as you like. Should work for crawfish as well.

I prefer a simple butter sauce I want the steak ad seafood to be the stars of the plate. melt the butter throw in some minced garlic and stir it around till ya smell the garlic add ya seafood of choice usually shrimp, crawfish, lump crab meat or some combination I also add some fresh mushrooms toss around a few minutes and poor over steaks.
