I'll make roux in an enameled cast iron pot and then transfer it to my big stock pot


I usually buy store bought roux but I've made it a couple of times and it worked well

I did the last roux in the oven and that's foolproof

Oven method will work fine in cast iron enamel. Probably on magnelite too. I've only used cast iron but other pots might work fine on the stove.

I make mine in a small magnalite pot and then transfer it to my really large magnalite pot. I never cook gumbo in my cast iron pots.

My dad has made a roux using this



and a microwave, and it was a damn good gumbo.
