So, I am getting my quail tonight that I bought. Any suggestions on how to cook them?

Deboned, fried , Chicken and Waffles.

A super nice mexican place here does chargrilled quail with this badass habanero dipping sauce.

I would do at least one preparation of this. One of my favorite ways to eat quail.

This one is in an ancho chile and garlic marinade. It's so fricking good.

Have had them chargrilled whole, fajita style before and it was very good.

Flour them, fry them, cook them down in a brown gravy with the trinity, and serve over mashed potatoes

I had 11 of them from a hunting trip I went on last week. I put cream cheese and sliced jalapeño in the chest cavity and wrapped them in bacon fastened with toothpicks. Smoked them on the grill with mesquite for about 30 minutes then put a hard sear on them at the end over hot coals and they were outstanding.

Did the same over the weekend. I had 13. Tossed the straggler over the top.
