Many use more of a BBQ rub on the outside. Some use cumin, chili powder, lots of paprika, brown or white sugar to name a few. I don't use Tasso often because of that. Depends on the dish. Guess I could rinse it off, but I wouldn't use it in gumbo anyway. I do enjoy the smoked flavor and sometimes simmer chunks in various dishes.
